Have you ever ordered a “Chicken Salad Salad” from Potbelly?
I’ll never forget the first time I heard my mom order that salad.
She and I went to the Potbelly drive thru and after she ordered her “chicken salad salad”, I thought she was LOSING IT… A chicken salad – salad?! C’mon ter bear, what’s the need for the extra “salad”?!
Turns out, she wasn’t all that cray – this salad had “chicken salad” on top of a “salad”… hence the double salad.
I dig it.
BUT – not everyone is like my mom and me…
My brother gags at the sight of mayo or any mayo containing food; Ron Swanson on the other hand hates salads.
Everyone loves a good medley – but not everyone enjoys salad – even when there is mayo in it! So I thought… Instead of putting chicken on your salad, why not put a mayo-less salad IN your chicken…?!! Everybody loves Caprese salad, so why not use that?!
Now maybe I’m the one going cray – but who cares? As long as it tastes good, I’m into it… and so is Ron Swanson. This isn’t a recipe for rabbits and is mayo friendly.
And the best part – it’s efficient A.F. !!
If you’re like me and love a good medley, or are just looking for a way to get some color into your diet along with your protein, this is the recipe for you!
1 chicken breast
4 pieces of sun dried tomato
2 slices of tomato
2 slices of mozzarella
4 large basil leaves
Preheat your oven. Slice tomato and mozzarella. Lay the chicken breast horizontally and cut two vertical slices. Stack a tomato and a mozzarella slice and sandwich them with a piece of sun dried tomato and basil leaves. Repeat with the other tomato and mozzarella slices. Insert the sandwiched tomato and mozzarella into the slices of the chicken. Bake the chicken until cooked completely. Serve immediately.!
