HOW TO MAKE CHIA SEED PUDDING THAT REDUCES INFLAMMATION

Chia seeds may or may not be coolest seed on the planet…

These itty bitty seeds can absorb up to 27x their weight in water because of its soluble fiber. Ya know, hence the pudding in chia pudding. 😉

I loved eating pudding as a kid & I feel like a lil nugget again with this chia pudding, but its got SO MUCH more bang for your buck.

Chia seeds are loaded with anti-inflammatory omega 3 fatty acids. When I spoke to the Loyola women’s soccer + volleyball team, I REALLY pushed this recipe on them because of the chia seeds’ ~magical~ anti-inflammatory powers (1). This fatty acid is essential – meaning that your bod can’t make it on its own – AND amazing for brain health (2). LOL, I could use all the omega 3 brain boosting I can get during my dietetic internship!

Not only do they contain omega 3s, but also a F*CK TON of belly filling fiber. 2 tablespoons of chia seeds has more than DOUBLE the amount of fiber than a serving of oatmeal.

This is a great brekkie for the girl who is OTG because you can prep it ahead of time and pop it into your purse when your running out the door.

Recipe

  • 1 cup unsweetened coconut milk
  • 1/2 cup raspberries
  • 1/4 cup white chia seeds
  • 2 scoops vanilla protein powder (i like f factor or uplift food)
  • cinnamon to taste

Directions

  1. Mix all ingredients in a mason jar
  2. Once chia seed pudding is well combined, let it sit in the fridge overnight
  3. Enjoy OTG in the morning!

SERVES 2 !! 

TIPPETY TIP: Chia seeds come in black and white… I prefer the white ones bc they look so much cuter!
