BBQ meet your new BFF: ENCHILADAS!

Tis the season for BBQ-ing.

This recipe is SUPER simple and delish.

If you don’t know how to grill, this is the perf way to breakout the BBQ without accidentally burning your eyebrows off!

Here’s what ya need:

Ingredients

  • 6 small tortillas (i use this brand
  • 1 cup diced red onion
  • 1 1/4 cup BBQ sauce (I use this brand)
  • 10 oz shredded chicken
  • 1/4 cup shredded mexican cheese
  • olive oil spray
  • avocado oil
  • optional: top with green onion and additional mexican cheese

Instructions

  1. Preheat oven to 375°F and spray baking pan with olive oil spray.
  2. Heat avocado oil in a large pan. Caramelize red onions.
  3. Set aside 1 cup BBQ sauce.
  4. To the large pan, add shredded chicken, 1/4 cup BBQ sauce, and mexican cheese.
  5. Fill tortillas with shredded chicken mixture and roll up.
  6. Pour 1/2 cup BBQ sauce on baking pan. Top with filled and rolled tortillas.
  7. Pour remaining 1/2 cup BBQ sauce on top.
  8. Optional: sprinkle more mexican cheese on top.
  9. Bake for 15-20 minutes.
  10. Allow 5 minutes for cooling.

Notes: Yields 3 servings. 415 calories and 30 grams protein/serving.
