Salmon Crack Dip

During the earlier days of the COVID-19 pandemic, I went to Whole Foods to pick up some groceries.

LET’S SET THE SCENE:

It was the Thursday night before St. Patricks day. AKA: the Thursday before sh*t hit the fan. Hails wrapped up the 4th day of her ICU rotation. Hails was waking up at 4:45AM everyday; she was a tired little dietetic intern. Hails also wanted to lighten her hair at the salon. After contemplating whether or not she should get her hair lightened while exhausted, she decided to go for it. After she transitioned from grown-out-balayage-Goldilocks to Barbie, she walked a few stores over to Whole Foods (WF). She couldn’t not go to WF, so she strutted in with her half asleep brain and Barbie locks, ready to grab some food before the COVID-19 chaos skyrocketed. 

To my dismay… Nearly EVERYTHING was gone –notably the shelf stable items.

I saw some canned salmon, tossed them into my cart, and strutted my Barbie stuff to the checkout.

The lady checking my groceries asked, “Why did you buy so much salmon? Are you buying for your cat??

… 😳

DID I ACCIDENTALLY BUY CAT FOOD?? 

I told her that I was babysitting my parent’s cat.

( My parents don’t have a cat ).

At that point, there was no going back.

For the record, my parents were out of town at that time and I was “babysitting” their fish.

I checked out, thanked the lady at the checkout, and sped walked to my car so I could look in my grocery bags to see if I bought a canned salmon for a cat.

*PHEW*

There was no “Blue Wilderness High Protein, Grain Free Product for Cats”. Just some human, and perhaps cat friendly, salmon.

SOOOOOO… Do I blame it on the new Barbie ‘do or my sleep deprivation???

🤷🏼‍♀️

Either way, Barbie is NOT putting that salmon to waste.

I’ve been on such a dip kick recently that I decided to use my *HUMAN canned salmon for this recipe. Might I add, it’s perfect for Facetime happy hour!

Recipe

  • 6 oz canned salmon
  • 2 T low fat mayo
  • 1/4 cup greek yogurt
  • 2 T lemon juice
  • 1/4 cup red onion
  • 1/2 tsp parsley flakes
  • 1/8 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Stir canned salmon, low fat mayo, greek yogurt, lemon juice, diced red onion, parsley flakes, salt, and pepper
  2. ENJOY your dip at your zoom happy hour & have a glass of cab for me 😉
