Seriously guys –it is SO YUM.

I’m not GF or DF but I wouldn’t be against it if all DF/GF food tasted like this.

I also like this recipe because it contains no animal protein! I won’t get on my soapbox about protein portion distortion ( again 😳 )…

Recipe:

  • 1/2 cup cashews
  • 1 T lemon juice
  • 1/2 cup chicken broth
  • 1 T parsley
  • 3/4 T minced garlic
  • 2 T nutritional yeast or grated parm
  • S&P to taste
  • 1/2 medium yellow onion, chopped
  • 1 cup mushrooms, sliced
  • Olive oil spray

Instructions:

  1. Soak cashews in water overnight 
  2. Drain cashews
  3. Blend cashews, lemon juice, chicken broth, parsley, garlic, grated parmesan, and S&P in a blender until well combined.
  4. Prepare chicken with desired seasoning –I like S&P and paprika 
  5. Spray a pan with olive oil spray and cook chicken
  6. In another pan, saute onions and mushrooms
  7. Add Palmini pasta and blended alfredo sauce to onion and mushrooms. Mix and heat until well combined 
  8. Top with chick
  9. DEVOUR!!
