Glop will forever and always have a special place in my heart, but I think it’s about time to toss in a more ~*~savory brekkie recipe to the mix.

Hold the sweets, KEEP THE FIBER.

So you know how this recipe is for breakfast… Like just one meal??

Well, it contains 65% of your daily fiber recommendation.

65%!!!

Because it has so much fiber, it’s important to make sure you’re drinking enough water; fiber needs water to work its magic!

Many patients from my clinical rotations and followers on Instagram ask why they’re constipated after they start eating more healthfully. The common reason is they aren’t drinking enough water to accommodate for their increased fiber intake!

(This is a very typical question when you’re a RD or RD2be) 

Water is SO IMPORTANT because it…

  • Aids in digestion
  • Prevents constipation (fiber needs water to work its MAGIC !!)
  • Cushions joints
  • Regulates body temperature
  • Maintains electrolyte balance

Note: I did not include measurements of cherry tomato, red onion, or chives. Add as many as your heart desires – the more, the merrier! 🙂

Recipe

  • 2/3 cup wheat bran
  • 1/2 tsp baking powder
  • 1/4 tsp garlic powder
  • 3 egg whites
  • 1/4 cup nonfat milk
  • 2 oz smoked salmon
  • 2 T whipped cream cheese
  • 2 tsp pesto
  • cherry tomato
  • red onion
  • chives
  • capers to taste

HOW TO

  1. In a medium size bowl, mix wheat bran, baking powder, and garlic powder until well combined
  2. Whisk in egg whites and milk
  3. Scoop the batter onto the griddle. Heat it SLOW AND LOW !!!
  4. When the pancake is cooked, top with whipped cream cheese, pesto, smoked salmon, cherry tomatoes, capers, red onion, and chives
