I LOVE hearing what types of recipes and content you guys want… What’s the purpose of AHTK anyways?!!

I asked how many of you had food restrictions and nearly half of you did!!

Many of my recipes are gluten free or dairy free, but I don’t do so purpose. I personally don’t have any food restrictions and don’t believe that individuals should restrict themselves unless it’s connected to their values, cultural beliefs, or legit intolerances.

Many people have hopped on the gluten free lifestyle bandwagon for a variety of reasons like improved GI and non-GI symptoms or perception that gluten is potentially harmful. Evidence shows that gluten avoidance for physical symptoms or diseases other than those specifically knows to be caused by immune mediated responses to gluten isn’t very convincing (1). A common misconception is that gluten free foods are healthier for you… but that isn’t necessarily true!

One risk of adopting a gluten free diet includes deficiencies of iron, zinc, potassium, and fiber. Many of the gluten free products in this billion dollar industry lacks fiber which promotes healthy bowel movement and weight loss in addition to reducing risk of developing CVD and type 2 diabetes (2)!

I was so excited to hear that GG crackers were launching gluten free crackers because these crackers will reduce barriers that keep GF individuals from reaching their fiber goals.

Each cracker has 3 grams of fiber which helps you reach your goal of at least 25-38 grams of fiber a day!

Recipe

  • 4 egg whites
  • 1 whole egg
  • 1/4 cup pumpkin purée
  • 1 T maple syrup
  • 5 honey cinnamon gg gluten free (1/4 cup)
  • 1/3 cup blanched almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • 2 T raisins

Instructions

  1. Preheat the oven to 350°F
  2. Whisk eggs in a medium to large size bowl
  3. Mix in other wet ingredients
  4. Pulverize the GG crackers in a blender
  5. Mix all dry ingredients
  6. Fold in raisins
  7. Divide into 6 silicone bagel molds
  8. Bake for 15-20 minutes
