Dessert hummus??
Sounds pretty… Sketchy??
But I challenge you to NEVER underestimate a chickpea. They are SO versatile…
Chickpeas are a great source of protein and fiber which makes it nearly impossible to over indulge on this dessert hummus. Also – is SO PERF to have around Halloween time so we don’t go overboard with Reeses and Snickers.
I have a VERY high dip-to-chip ratio so I usually just eat this by the spoon ( LOL ).
If you’re more of a chip person, you could use graham crackers, apple slices, or cinnamon sugar pita chips !!
Recipe
- 1 can chickpeas
- 1 T vanilla extract
- 1/3 cup maple syrup
- 1/3 cup cashew butter
- 1/3 cup rolled oats
- 1/3 cup pumpkin puree
- 1/2 cup chocolate chips
- 2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 cup dark chocolate chips
Directions
- Rinse and drain chickpeas
- Combine all ingredients ( except for the dark choco chips ) in a food processor
- Pulse until consistent
- Fold in chocolate chips
