KOPY KAT KALE SALAD – IT’S ACTUAL DESSERT

This post is LOOONG overdue… not just because it’s a kale recipe ( lol ), but this salad is THE salad that every girl on Langdon will not stop talking about.

This Citrus Kale Salad is so healthy. It is just EVERYTHING, so I had to recreate it.

I’ve made way too many trips to the grocery store with the only intention of purchasing this kale salad. You know how that goes – you have one item on your list and end up buying half the store??

Kale is and forever will be known as a superfood: it’s loaded with antioxidants, an excellent source of vitamin c, a fabulous source of vitamin k… ( the list goes on… ). The issue is that kale can be tough and have that “branchy” texture.

The trick is to allow the dressing to marinate in the kale for a few hours. This softens the kale’s texture. Fresh not only uses that little trick to add flavor and soften the texture, but they also cut up the kale into small pieces to increase the area exposed to the salad dressing.

I ALWAYS talk about this on Instagram, but my top tip is to use kitchen scissors when preparing a salad – it’s safer, more efficient, and WAY easier than cutting up a salad with a knife. Get yourself a cute pair like these – it’s all about that pink aesthetic. 😉

Recipe

  • 4 cups chopped kale
  • 3/4 cup dried cranberries
  • 3/4 cup gold raisins
  • 1/2 cup diced red onion
  • 1/3 cup slivered almonds
  • 1/2 cup feta cheese
  • 1 T lemon juice
  • 2 T honey
  • 2 T olive oil or vegetable oil
  • Optional: 1/3 cup cooked quinoa
  • Salt + pepper to taste ( i like a LOT of pepper 😛 )

Directions

  1. Finely cut the kale with kitchen scissors
  2. Dice the red onion
  3. In a large Tupperware, add all ingredients and mix until the lemon, honey, and oil spread evenly on the salad
  4. Allow the kale salad to sit in the refrigerator for at least 3 hours
