BUFFALO CHICKEN TENDERS

What happens when you grow up with two older brothers???

You become a HUGE b-dubs girl.

During football szn, I would sit on the couch and STUFF my face with buffalo wild wings smothered in blue cheese dressing while I pretended to be invested in whatever football game was playing.

Am I the only one drooling rn thinking about b-dubs??

I didn’t only stuff my face because they were delish, but it was also SUCH a competition eating with my brothers and my dad.

My brother Evan LITERALLY sucks the buffalo wings dry and roasts me if he finds a speck of meat on my wings…

My brother Alex is inhales the wings like he is in a wing eating contest…

( My sinuses cleared up just thinking about that )

And my dad could eat wings until the cows come home.

The competition was MORE fierce than the football game. I usually never made it past halftime, but I hung in there as long as I could.

Fast forward a few years and I’m in college.

This WHOLE situation repeats during the Superbowl.

I stayed for the halftime show – helloooo Adam Levine!! – and after having my fair share of buffalo, I felt like absolute CRAP!

I took a look at the B-Dubs nutrition information and it was no mystery why I felt so sluggish… One medium size boneless wing has 1,490 calories, 77 grams of fat, 30 grams of saturated fat, and 3 grams of trans fat.

MEEP.

But have no fear, I have a recipe that WILL satisfy your buffalo craving without the buffalo hangover. These chicken tenders are packed with protein and fiber!

Recipe

  • 1 lb chicken tenders
  • Frank’s Red Hot
  • 1/4 cup pulverized GG crackers
  • 2 T nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt + pep to taste
  • blue cheese
  • olive oil spray

Directions:

Marinate chicken tenders with Frank’s Red Hot in the fridge for at least 24 hours.

In a medium size bowl, mix the pulverized GG crackers, nutritional yeast, garlic powder, onion powder, salt, and pepper.

Cut the center of the marinated chicken tenders lengthwise and stuff with ~1.5 tsp of blue cheese. Then, coat the stuffed chicken tenders with the dry mixture and set inside the Air Fryer. Continue until all chicken tenders are coated. Spray the chicken tenders with the olive oil spray in the Air Fryer basket.

Cook at 370°F for 10-13 minutes.

xx hails
