CALLING ALL COLLEGE STUDENTS – Make this Cookie Dough to Combat Stress

My boss is the fabulous Registered Dietitian Nutritionist, Joy Bauer. If you’re living under a ROCK and don’t know who she is, here is just a lil’ intro for ya…

Joy Bauer is one of the nation’s leading health authorities. Not only is she the host of NBC’s show, Healthy + Happiness and the nutrition expert for the TODAY show, but she is also the founder of Nourish Snacks, a monthly columnist for Women’s Day magazine, and the official nutritionist for the NYC Ballet.

Pretty cool – RIGHT?!!

Aside from her impressive list of jobs, she has been working on a book called “Joy’s Simple Food Remedies: Tasty Cures for Whatever’s Ailing You“. In this book, Joy tackles 20 common day ailments, explores the science, the cause, and offers the top 5 foods to help remedy the specific issue.

OBVI Joy shares food remedies to help lower high blood pressure, prevent muscle cramps, and combat colds and the flu !! She also shares a couple things that as a college student, I find are very, VERY relevant… Can you guess what those two are?!!

Hint – it has to do with a GNO and exams…

YAS !! You guessed it – two other food remedies she offers cover hangovers and anxiety and stress. For this post, I want to focus on the stress part because we are in the midst of midterm season! As a “RD2Be”, I learn ALL 👏🏼 THE 👏🏼 TIME 👏🏼 how important it is to take preventative measures for anything from diabetes to… ANXIETY !!

And I mean… what food could help you avoid anxiety better than cookie dough??

COOKIE DOUGH MADE WITH CHICKPEAS !!

Here is how to make cookie dough that..

A. WON’T fill you out and

B. Will ease your anxiety and stress

!!

Ingredients:

1 can chickpeas

1 T vanilla extract

1.5-2 T maple syrup

~1/3 cup coconut sugar (or sweetener of choice to taste)

Cinnamon to taste

1/2 cup almond milk

1/3 cup cashew butter

1/3 cup rolled oats

1 scoop collagen ( OPTIONAL )

1/3 cup dark choco chips

Directions:

Rinse and drain chickpeas. In a blender, add all ingredients except the dark choco chips. Blend until the cookie dough has a consistent texture. Spoon the cookie dough into a bowl and fold in choco chips. Let the cookie dough chill in the fridge before serving. But most importantly, en”JOY” and relax!!
