How to Make Mocha Blackout Truffles

In JUST few short days – 4 to be exact, but who’s counting?? – I will be sipping on a Cosmopolitan in one hand and a watermelon martini in the other hand as I celebrate my 21st birthday at the Kit Kat Lounge.

( The dinner package includes two martinis 😉 )

To say that I’m excited is an understatement. I am super lucky because I’ll be able to celebrate with my best friends from school and home!

Yesterday, I was at the mall with my mom and we were hitting up EVERY store – from Nordstrom to Akira – on the prowl for a 21st birthday outfit! I was on the lookout for the something UBER sparkly and pleathery. So basically, something that would help me fit in at the KK Lounge….

😉 hehe.

We put together an outfit that is MORE extra than a 35 stick pack of Extra gum.

Picture a pleather black skirt, sequin top, and silver platforms.

Maybe they will think that I am one of the dancers and I can strut it out on the cat walk??? With a bit of liquid courage, who knows.

ANYWAYS – I will NOT ONLY be celebrating my birthday with my friends, but also my mama.

Correction – I will be celebrating my birthday with Honey Mama’s!

Honey Mama’s is a chocolate bar company that makes treats that are sweetened with honey and are made with ONLY five whole foods.

EEP – I DIG!!

I also love that the bars are refrigerated! It goes to show that the ingredients are real – so real that you need to refrigerate them!

I always freeze my dark choco chips ( >70% cacao, as always ) and chocolate treats because I find that chocolate tastes best when it’s cold and I never overeat chilled chocolate – anyone else feel that way??

The bars have a bold flavor with a texture that is to DIE for. Its somewhat soft, but hard enough to hold upright.

Also, if you are one of my gluten, soy, dairy, or grain free gals – you’re in clear! The Honey Mama’s bars are free of all of those allergens. Not that aesthetic is everything – but their packaging must be acknowledged for how Instagram worthy is. The packaging has a rustic and old world appeal to it AND they use environmentally sustainable shrink wraps for the case boxes. YAS PLS!!

Their flavors include: Ginger Cardamom, Nibs & Coffee, Lavender Red Rose, Oregon Peppermint, Dutch, CocoNoNut, Mayan Spice, and Peruvian Raw.

Take a wild guess as to which is my fave…

You guessed it – the Nibs & Coffee. And that is what makes these truffles so… blacked out, along with the cacao powder!

These truffles are SO chocolatey and the coffee will keep me rallying for the big night!

Recipe:

  1 1/2 cup pitted Medjool dates (soak warm water 10 minutes)

♡ 1 Honey Mama’s Coffee bar

♡ ¼ cup Cacao Powder + extra for coating

♡ Dash of Cinnamon

♡ 1 tsp Vanilla Extract

♡ 1/4 cup Cashew Butter

♡ 2 T Hemp Seeds

♡ Pinch of Sea Salt

♡ Optional : 1 tsp Instant Espresso

Directions:

Soak Medjool dates in warm water in a medium sized bowl for about 15 minutes.  Drain the Medjool dates.Add all ingredients except the Honey Mama’s Nibs & Coffee bar to the bowl of  a food processor. Blend the ingredients until consistent.

Microwave the Honey Mama’s Nibs & Coffee bar in the microwave for about 15 seconds. Add the melted bar to the food processor and blend until consistent. Transfer the truffle dough into a bowl and refrigerate for ~ 10 minutes.

Scoop the chilled truffle dough onto a plate with parchment paper. Freeze for ~ 1 hour.

Roll truffles in cacao powder ( optional: mix in some coconut sugar if you would like the coating to be sweeter ) & dig in!
