Low Fat Tuna Salad

I’ve recently developed an OBSESSION with tuna. It’s convenient, easy, and healthy.

While in the big apple, I would buy canned tuna because I had just literally no spare space in my fridge. Tuna to the rescue!!

I LOVE LOVE LOVE chicken salad, tuna salad, & egg salad every protein based salad that’s smothered in mayo, but I’m not a fan of what it does to my hips, so I created a recipe that tastes DELISH and that makes an amazing GG cracker topper.

I always tell AHTK readers that you just can’t eat a GG cracker plain… it’s a fiber cracker!! As my boss Tanya Zuckerbrot would say, use the cracker as a vehicle to get fiber in your diet, but not as a plain cracker snack!

Here is how to make this amazing cracker topper…

Recipe:

¼ cup red onion

1 ½  can tuna

¼ avocado

¼ cup greek yogurt

1 tsp evoo

1.5 tsp lemon juice

1.5 tsp dijon mustard

Drizzle evoo on top

3 pickle slices for topping

Directions:

Dice the red onion and mash in the avocado. Mix in tuna, greek yogurt, evoo, lemon juice, & dijon mustard. Add a couple spoonfuls to a GG cracker and top with sliced pickles.
