Up Your Taco Tuesday Game with These Bell Pepper Tacos

IMO, Mexican food is the absolute best kind of food. My go-to dinner is a gourmet salad with salsa stuffed in a Whole Food’s Whole Wheat portion control tortilla – if we wanna get specific!

MMK MMK, so maybe it isn’t so gourmet. However, I do like to up my Mexican food game on Tuesdays by whipping up a dish that is a little bit more gourmet!

BELL. PEPPER. TACOS.

I’ll give you a hot sec to clean up the drool from your keyboard.

From personal experience, I would highly recommend using Clorox wipes. 😉

YOUR TACO GAME WILL NEVER BE THE SAME.

These “tacos” aren’t only PACKED with flavor, but they also are rich in Vitamin C and other antioxidants. In fact, one bell pepper may provide up to 169% of the RDA !!

PASS THE PEPPAHS PUH-LEASE !!

Recipe:

♡ 3 bell peppers

1 lb ground turkey

♡ 1/2 cup white onion

 avocado oil

♡ 1/2 packet Trader Joe’s Taco Seasoning Mix

♡ lettuce

♡ cheese

♡ black beans

Directions:

Preheat the oven to 375° and spray a large baking dish with cooking spray.

Sauté the white onion with a splash of avocado oil for about 2 minutes. Add the ground turkey and Trader Joe’s Taco Seasoning. (more if you can handle the heat 😉 ) Remove from heat.

Cut the bell pepper in half and drizzle on avocado oil. Spoon the ground turkey mixture into the bowl of the bell pepper. Place the bell peppers in the large baking dish and bake for around 20 minutes. Top with lettuce, cheese, and black beans ( to taste ).

Now SPRINT – don’t walk – to the grocery store to prep for taco Tuesday !!!
