How to Make Strawberry Shortcake Overnight Oats

WELL WELL WELL… I don’t mean to brag but this oatmeal is HEAVENLY.

Like straight up, I will have “Straw-buh-buh-buh-buh-berry Shortcake” going through my head for the rest of the day.

Not only is this mason jar absolutely delicious, BUT it is also packed with protein and fiber.

In the wise words of Tanya Zuckerbrot, “Protein and fiber at every meal makes losing weight no big deal”.

I refuse to start my day off with anything too sugary and I prefer to have a high fiber & high protein breakfast so I can keep up with the city that never sleeps.

Now don’t get me wrong, I LOVE LOVE LOVE a bite of dark chocolate and an occasional dessert. However, I don’t want to start off my day with anything processed or high in sugar.

… and not just a little bite of dark chocolate after dinner, I wake up in the morning in the mood for something sweet, but that won’t set me make me crash after my short subway ride to work.

So, instead of grabbing a chocolate croissant with my cold brew from Starbucks, I make overnight oats ( or GG’s if I have time ).

Overnight oats are FABULOUS for the girl on the go. As I start to #adult and work, I realize that I have significantly less time in the morning to make a fabulous breakfast omelette with sautéed veggies with a fresh cup of coffee.

Weekends are ferda boujee omelettes,

week day // work days are ferda overnight oats. 

The AM routine looks more like me quickly rubbing serum and sunscreen on my face while spooning overnight oats or munching on GG’s as I order a cold brew from my Starbucks app.

SO – if you are crazy about starting your day off on the right foot, but still somewhat shambley when it comes to timing, this recipe is for you. You can prep it DAYS in advance and satisfy your sweet tooth without the excess sugar!

Oh, and it’s so instagrammy too – RIGHT?!!

Recipe:

♡ 1/2 cup oats

♡ 1 T flax meal

♡ 1 cup Strawberry Vanilla Cashew Mylk 

♡ 1/2 tsp stevia

♡ ½ cup vanilla Greek yogurt

♡ ½ cup strawberries

Directions:

Combine all ingredients in a mason jar and shake. Store in fridge overnight and dig in in the morning!

The Strawberry Vanilla Cashew Mylk makes it SOOO creamy and delish. It truly ups the Strawberry Shortcake O.O. game.

Does anyone else find themselves rushing in the morning??? ORRR am I the only crazy one??
