Welp. I survived the big 21st birthday!
** Emphasis on the “survive” **
My friends and I had a UBER fun time downtown Chicago! We sipped on glow stick martinis at the Kit Kat Lounge in Boystown and pregamed for bars in my friend’s apartment in the South Loop.
I was planning to walk the “marathon”, but it quickly turned into a FULL ON sprint when my friend iced me THREE TIMES before dinner.
Once at my house and twice in the limo. You could say that I sipped on those glow martinis VERRRYYY slowly and chugged some H2O between each sip.
I kid you not, I went to the bathroom 3x at the restaurant. The drag queens thought I had a bladder problem…
Anyways, despite the H2O chugging, I did wake up the next morning feelin’ a big shambly and a bit… HUNG. I’d like to blame it on the Smirnoff ices, but it was also was a very long night.
My mom came in CLUTCH the next morning; she made my friends and I a strata.
I MUST NOTE – This wasn’t just any ordinary strata, it was hungover gal’s DREAM. It was SUPER cheesey, buttery, & salty. My mom made it with whole wheat bread instead of white bread because white bread is its own species of Devil, but thats a blog post in itself…
Do yourself a favor and MAKE THIS STRATA for your friends 21st, or before a big night out. This egg dish saves lives and science agrees. According to Science Direct, eggs contain large amounts of cysteine, a semi-essential amino acid that not only is fabulous for your skin, hair, and nails, but also prevents fatty liver and lowers toxic acetaldehyde levels after alcohol ingestion.
SO essentially, eggs can help mop up the leftover toxins from the Smirnoff ice’s and glow stick martinis.

After having a couple blocks of strata, I was able to make it downtown for my birthday dinner at Summer House Santa Monica with my parents AND EVEN rally with a glass of rosé.
Trust me, it works like a charm.
My mom adapted this recipe from Homemade Interest’s Gruyère, Ham, and Spinach Strata, but swapped a few ingredients to All Hails-ify it.
Not all heroes wear capes… some wear aprons while making a strata after a night out.
♡ 15 ounces spinach
♡ 1 1/2 cup cut onion
♡ 3 T ghee
♡ 1 lb Ham, cut in cubes
♡ 1 tsp salt
♡ 1/2 tsp pepper
♡ 8 cups whole wheat french bread
♡ 1 cup parmigiano reggiano
♡ 2 cups gruyere, grated
♡ 2 3/4 cup almond milk
♡ 9 eggs
♡ 1/2 tsp dry mustard
In a large skillet, heat butter and sauté onions until the onions are soft. Add spinach to the pan with until combined.
Mix the two cheeses in a bowl and grease a 3 quart gratin dish with butter and spread one third of the bread across the bottom of the dish.
Add a layer of spinach using 1/3 of the spinach mixture.
layer 1/3 of the ham on top.
Repeat layers 2x.
Whisk eggs, milk and mustard and add salt and pepper.
Pour egg mixture over the strata then cover it with plastic wrap and place it in the refrigerator overnight.
Preheat the oven to 350 degrees and bake uncovered for 45-55 minutes, or until golden brown.
EXTRA CRED if you eat your strata with some fiber dense GG’s or Frank’s RedHot ( my absolute fave hot sauce )! You may have to wait until the hangover subsides to add the Frank’s…
