Pancake Pizza

How do you like your spaghetti to be served?
Some prefer their spaghetti to be drowning in marinara sauce, others may prefer their spaghetti with a light drizzle of olive oil and capers ( ME !! ).

Buddy of the Elf, on the other hand, enjoys his spaghetti immersed in maple syrup.

Call me crazy, but I have always secretly wanted to try the famous, Buddy the Elf spaghetti. He somehow manages to make it look appetizing…

I don’t have the guts to try Buddy’s maple syrup spaghetti. Like the Krusty Krab Krabby patty, I’ve accepted that this meal should stick to the big screen.

Like Buddy the Elf, I enjoy maple syrup on a common savory food – pizza!! BUT, I prefer sticking to a sweeter base when use maple syrup. Instead of a dough base, I use a pancake as my base!

This recipe is super simple and the protein will keep you full for hours. The most difficult part of this recipe is flipping the pancake. Remember, it is all in the “flick of the wrist”.
Recipe:

1 scoop of chocolate protein powder

1 egg white

1/2 banana

splash of milk

heaping spoonful of Greek yogurt

toppings: chia seeds, strawberry, banana, blueberry, pineapple, apple, granola, coconut flakes, cacao nibs, peanut butter, nuts, seeds,

Directions:

Mash banana with a fork. Mix in protein powder, egg white, and milk. Mix until consistent. Spoon the pancake mix in a non stick buttered pan. Flip when bubbles appear. When completely cooked, transfer the pancake to a plate and evenly spread the greek yogurt on top. Cut the pancake pizza into six pieces. Add desired toppings.

My favorite protein powders are Chapul protein, Rootz nutrition, and Perfect Fit Protein. For this recipe, I used chocolate Chapul protein.
