Pesto Grilled Cheese

A few week ago, my sorority had its annual philanthropy event – “Grilled Cheese with the G Phi B’s”.  We sell grilled cheese at G Phi, the first house on Langdon, from 10 PM – 2 AM on a Thursday night… You know what that means!!
All of the sisters were assigned one of three shifts: making grilled cheese in the kitchen, advertising our event on Langdon and State street, or selling the grilled cheese. Every year, I end up in the kitchen cooking grilled cheese for all three shifts. I get in my #element in that kitchen.

As a dietetics major, and a normal human being, I was disgusted with the amount of butter we used… I had a *mini* heart attack when I first saw the amount of butter we had!! During rushes, we would grab the butter with our gloves and literally slap it on the white grilled cheese bread.

Aside from grilled cheese with the GPB’s, I also make grilled cheese at the Bistro I work in. We use cheddar cheese, pesto, and whole wheat bread, no butter.
I created a medley recipe of the G Phi B grilled cheese and the Bistro cheese that WON’T give anyone a ( mini ) heart attack or doesn’t taste like cardboard.

Recipe

2 slices of Ezikiel bread

1 T ghee

1 T pesto

2 slices of swiss cheese

Directions

Melt ghee on a medium-high heated pan. Rub both sizes of the Ezikiel bread slices on the melted ghee. On one slice, add 2 slices of swiss and 1 T of pesto. Place the other slice on top and flip after a minute, or until brown and crispy.
