What’s my favorite thing about getting sushi??

Well, the sushi. ( DUH !! )

Right after that, the GINGER !!

I’m that girl who will go out for sushi anytime, any day. ALSO, I will eat all of the ginger that comes along with the sushi, and to be honest, I’ll probably eat yours too – never leave me  at the table alone with your ginger.

Aside from the delish taste, I wolf down ginger because of its health benefits!

Digestion : ginger increases motility ( muscle contraction ) throughout the digestive tract; ginger also contains phenolic compounds which help relieve GI irritation and stimulate production of saliva and bile – ginger has been used for hundreds of years to treat GI problems !!

+ Reducing Inflammation : ginger suppresses pro-inflammatory compounds produced by cells of joint cartilage

With health benefits, a recipe always follows …


1 cup rolled oats

1/2 cup chopped carrots

1 cup medjool dates

1/4 cup pecans

1/4 cup hemp seed

1/4 cup melted coconut oil

2 T cocoa powder

2 tsp vanilla extract

1 tsp cinnamon

1/2 tsp ginger


Finely chop carrots, medjool dates, and pecans. Add all ingredients to a large bowl and mash together with hands until consistent texture. Cover bowl with plastic wrap and allow bowl to sit in the fridge for atleast 15 minutes. Roll mixture into balls and take a bite!

My little enjoys eating my Coconut Energy Balls by the spoonful out of a tupperware so if you don’t want to get your hands dirty, you can always have a spoonful of energy instead!
