Get Buzzed Off Overnight Oats

I’ve got this weird thing about oatmeal…

My freshman and sophomore years, oatmeal was the ONLY breakfast food I ate. In the dorms freshman year, I didn’t have enough time to eat breakfast in the cafeteria. In my sorority house sophomore year, our chef didn’t prepare breakfast and our cereal bar was filled with sugary cold cereals. So, I made oatmeal in the microwave; I prefer something hearty and healthy if I’ll be in class all day or studying.
Whether I spooned my oatmeal out of a disposable cup while sprinting to class or sat in my room eating oatmeal while sipping on coffee, I’d always stick to the same, simple breakfast.

Both freshman and sophomore year, I ordered my basic groceries off Amazon Prime ( yea, I’m pretty lazy ). My family gave into the Amazon Prime bandwagon my freshman year and never looked back. At this time, I was an Amazon Prime newbie. I’d scroll cluelessly through Prime Pantry, find whatever I needed, like oatmeal, and checked out. ( HUGE shoutout to the Quaker for keeping me full and healthy the past couple years. )
The issue with cluelessly shopping? You may end up with 6 containers of Quaker Oat’s oatmeal… Yes, I accidentally ordered 6 FULL TUBS OF OATMEAL!!

I totally milked this experience and used it as an ice breaker when I was meeting other freshman who were also desperate to make some friends. And it worked! My best friend calls me the “Amazon grocery gal” and we often reminisce about my odd Amazon experience.
Anyways, I feel like that experience was pretty important to share before diving into this post. For those who are on the go in the morning but still want a hardy breakfast and caffeine – I’m with ya. That’s why I developed this recipe that kills two birds with one stone: you get your caffeine fix AND a healthy & hardy breakfast!

Heres what ya need:

Recipe:

1/3 + 2 T rolled oats

1/3 cup coconut milk

1 T chia seeds – check another chia recipe HERE

1 T flax seed

1/2 cup coffee

1/2 T maple syrup

splash vanilla extract

Directions

Add all ingredients to a mason jar. Shake mason jar until all ingredients are mixed completely through. Refrigerate overnight. Dig in!

I enjoy my overnight oats cold. You can also microwave in the mason jar if you wish to eat it warm.
My fave part of this recipe – I can get a caffeine buzz with a spoon!!
OH! BTW, I finished the 6 tubs after first semester. I wasn’t joking when I said, I only ate oatmeal for breakfast…
