If I had a penny for every time I was running late to work or class, I would be writing this post from a tanning chair on my private island instead of the Colectivo coffee shop on State Street. It’s not that I don’t care about class, I just have an unbreakable love for my fluffy, blue comforter and cloud-like pillows.
Another reason I am occasionally running late is because I enjoy slow mornings and a complete breakfast. On my Instagram, I always share pics of my collagen coffee, ACV bevvie, and yogurt that is decked out with berries.
On the days I have no time to spare, I blend up a smoothie and take it to go in a coffee cup. If I can’t have a slow morning, at least I have a balanced, healthy breakfast.
The smoothie is great on the go because you can add a crap ton of greens and ( if done right ) not taste them. I would sneak spinach in my nanny kids’ smoothies and guess what?? They NEVER noticed! I’m the woat, but you can’t complain about getting your vitamins in… ¯\_(ツ)_/¯
Also, you can make it a full meal. You’ve got your carbs from the fruit, protein from the protein powder, and healthy fats from the coconut oil. The additions also keep the smoothie from tasting aggressively sweet. The coffee cup is necessary because without a cover, I would spill my green smoothie everywhere.
When I was running late for my Nutri Sci lecture, I took an Uber and accidentally spilled my coffee EVERYWHERE..
EEP, lets just say that the driver wasn’t very happy with me….
To keep things simple when I’m on the go, I use the same recipe. It’s my fave and it keeps me full for hours after a long sprint to lecture!!
Unsweetened coconut milk ( or other milk sub. )
1 scoop of vanilla protein powder
Handful of frozen blueberries
1/2 frozen banana
1 handful of spinach
1 tsp of coconut oil
Optional: chia seeds
Pour milk into blender then add other ingredients. Blend and serve in to-go coffee cup. Then, run to work!!
