Low Carb Rice: The Secret Ingredient

Hello, hello!!
If you follow my Instagram account, you know I’ve been bopping all over the place this past month. I moved out of my sorority house, moved home, moved my brother to Philly, and finally moved back to Madison.
I’m happy to settle down for a bit. Traveling makes it difficult to maintain a healthy diet and consistent workouts. Now that I am settled in an apartment, I enjoy cooking for myself and having a consistent workout schedule…
However, this is my first time living in an apartment, preparing my own food, and doing my own dishes; I lived in a dorm freshman year and ate in the cafeteria. Sophomore year, my sorority house had a chef to provide meals and clean dishes. Since I’m in charge of cleaning my own dishes, I have become a ~one dish wonder~.

I don’t have much time for cleaning dishes because I’m running to and from work and class. But most of all, I’m just lazy when it comes to dishes. I stick to simple meals with little cleanup.
Garbage salad are my go-to meal. I throw literally everything I have from the fridge into a salad bowl. It’s simple and efficient. Garbage salads just require a fork, bowl, and knife. My friend introduced me to something that is almost as simple as a garbage salad. Can you guess what it is?? ( hint: it isn’t rice )

It’s cauliflower rice!
This rice alter ego doesn’t require boiling water and doesn’t take much time to prep. I buy frozen cauliflower rice from Trader Joe’s so I don’t have to blend up my own.
Cauliflower rice only has 25 calories per cup compared to the 218 in cooked rice. There are also 40 less grams of carbs. Cauliflower rice is evidence that dreams truly do come true. If you’re looking for an extremely simple & carb-ey tasting dish, this recipe is for you.

Recipe

1.5 cups prepared cauliflower rice

1/3 cup mixed vegetables

1 egg

Splash of EVOO

Cooked chicken

Directions

Add EVOO to a pan and turn heat to medium. Fry egg in EVOO. Add the rest of the ingredients to the pan and stir until slightly browned. Scoop into a bowl and top with low sodium soy sauce or liquid aminos.
