Have a sweet tooth??

Me too. I could eat chocolate ALL day, every day. And twice on Sunday.

This recipe is for my fellow sweet tooth friends who can’t stay away from desserts. The best thing about these balls is that they are guilt free!! ( Just make sure you don’t eat them all 😛 )

I love to whip these up in the beginning of the week. They are great snack to take on the go in ziplock baggies or in a little tupperware. I also have a bite before or after sweaty yoga sesh when I’m in b/w meals. Nothing is worse than being super hungry or having a huge meal before hot yoga…

These balls have protein from the sunflower seed butter – if you haven’t yet tried this butter, try it ASAP! The oatmeal and chia seeds provide fiber to keep you full for hours and the coconut oil to reduce inflammation. These balls are a winner.

Recipe:

1 cup oats

1 cup unsweetened coconut

1/3 cup sunflower butter

1/4 cup dark chocolate

1/4 cup chia seeds

1/4 cup maple syrup

1.5 T coconut oil

1 tsp vanilla

Directions:

Set aside half of the coconut shavings. Add and mix all ingredients into a large bowl. Put the bowl in the fridge for 30 minutes. Put the other half of coconut shavings in a 350 degree oven for 5 minutes. Roll mixture into balls with a spoon and dab into baked coconut.

PS. make sure you keep it in the fridge for the full time to allow the ingredients to stick together!! i made the mistake of taking them out too early on the first trial and the balls didn’t stay together.
