An Apple A Day…

… keeps the doc away !!
I’ve an obsession with the fall. I am ready to dive in head first into a PSL from Starbucks ( or my fave PSL substitute ). My roomies and I are eager to fill our apartment with little pumpkins and watch Disney Channel Halloween movies. I may be a junior in college but I’ll never outgrow Twitches or Halloweentown. No matter how old you are, you can’t deny that…

Aside from pumpkins and halloween movies, we participate in our sorority’s tradition of apple picking! The apple orchard we go to has the most fresh and crisp apples. In preparation for our next trip, I created a recipe for those delish apples.

Recipe

1 apple

2 tsp coconut oil

1 T peanut butter

cinnamon

Directions

Dice apple. Heat a pan with 1 tsp of coconut oil and add the diced apple. Mix apple into coconut oil until browned. Dump the cooked & diced apple into a small bowl. In the same pan, melt coconut oil and mix with peanut butter. Drizzle onto the diced apple. Sprinkle cinnamon on top. Dig in!!

ALSO : If you want to make this a dessert, add a scoop of Halo Top vanilla ice cream. Trust me, you will have no regrets.
